Careers & training in chocolate making??
I am considering a future career as a chocolatier- I've always been intrigued by chocolate making, not only as a career, but as an expression of art. I currently live in the Los Angeles area, and was wondering, are there any chocolate making institutes in California (preferably), or anywhere in the states, really.. I am willing to relocate for a while, if there are any such institutes in the US (please mention any). I am more interested in courses that focus primarily on choclate making, as opposed to general pastry courses. Also, what are the steps to obtain a career in this field? What are the options? I would appreciate any feedback from people who are in the field, or are familiar with it. Thanks

- Other than the French culinary art school in NYC, I am not aware of any school that offers just classes on making chocolates and/or chocolates desserts; however many school offer culinary art and in particular a Baking and Pastry Arts Program where you learn to create "... elaborate showpieces that incorporate chocolate molding and sculpturing... " (California Culinary Academy)
